Shauna has become a professional no-bake cookie maker with this recipe. I originally got it from Aunt Amber when I was a new wife. It is effortless to adjust. We only sometimes have coconut so I've used many other things in its place. One favorite addition is chopped nuts of any kind or you can just add more oats. Old-fashioned oats make chewier, denser cookies. This is one of the cookie recipes I always seem to have the ingredients for. It has become a frequent Sunday evening treat.
1/2 c butter
1/2 c milk
1/4 c cocoa
1/8 tsp salt
Bring to boil. Turn off heat.
add:
1/2 c peanut butter
3 c oats
1/2 c coconut
1 tsp vanilla
Place in spoonful size mounds on parchment paper to cool.
