The checkered Better Homes & Gardens New Cook Book has stayed in our cupboard through all the recipe book purges over the years. It was a wedding present from someone dear to me (I can't remember who). In this era, I find recipes online but something keeps me from tossing this book. It could be because my mother had the New Cook Book from the 1970s. It was the go-to book for almost anything. Before the internet days, every household had a large cookbook that held essential recipes. A few recipes keep me coming back. I'll publish them here for the family to refer to.
Despite the vast world of recipe options online, there are a few from BH&G that keep the dust from settling on this book. The Biscuit Supreme is one of them. I've doubled this recipe for our big family. Even for a small family, make more and have some the next day.
Prep time: 20 min.
Bake time: 10 min.
Oven 450 degrees F
Ingredients:
4 cups flour
2 tbs. baking powder
4 tsp. sugar
2 tsp. cream of tartar
1/2 tsp. salt
1 cup butter
1 1/3 cups milk
Mix all the dry ingredients. Cut in the butter until it looks like crumbs. (Use a pastry blender or the "D" as it was called in my home.) Make a well in the center and add the milk all at once. Stir until just moistened.
Now you could roll them out and cut neat little biscuits. Little ones love to help. For the sake of time (and because I waited until 10am to feed the family) we found a faster way. With clean hands make mounds of dough and pat them into biscuit shapes.
Place the dough mounds onto a greased air-bake pan about an inch apart. Place in a 450-degree oven for 10-12 minutes.
Serve them hot with jam and butter.
These also taste amazing with sausage gravy. (Also gives you all the calories you'll need for the day in one meal. So convenient!)
